Ingredients for 10 servings

3/4 cup fresh orange juice

1/2 cup canola or safflower oil

1 tbsp sesame oil

4 tbsp soy sauce

2 tbsp soy sauce

1 x lemon, juiced

2 x cloves minced garlic

1 tsp grated fresh ginger

Salt and pepper to taste

3 cup cooked, cooled brown rice

1/2 cup raisins or currants

2 cup scallions, chopped (1 large bunch)

1/4 cup toasted sesame seeds

1/8 oz. can sliced water chestnuts, coarsely chopped

1 cup mung bean sprouts, drained and rinsed

1/4 cup toasted peanuts

1 large yellow or red pepper, chopped

1 stalk celery, diced

1 small jalapeno, minced (optional)

2 tbsp parsley or cilantro, chopped fine
