2 cups cucumbers , seeded, chopped

1/2 teaspoon salt

1 tablespoon extra virgin olive oil

Dressing

4 cups tomatoes , seeded and chopped

4 ounces french bread, cut into 1/2-inch cubes

2 cups boneless skinless chicken breasts

1/2 cup V8 vegetable juice (or other vegetable juice)

1/4 cup red wine vinegar (I sometimes throw in a sprinkle or two of balsamic vinegar)

1/3 cup chopped fresh flat leaf parsley

olive oil flavored cooking spray

1 cup chopped green bell pepper

1/2 cup chopped red bell pepper

1/2 cup red onion , sliced vertically

3 garlic cloves , minced

1 tablespoon water
