What a light and flavorful meal. I serve it on angel hair pasta, and I do cheat by using jarred artichoke hearts. This is one of the only fish meals I can get a very picky little boy to eat.

Ingredients for 3 servings

3 tbsp butter

1 tbsp olive oil

1/2 large onion, chopped

4 x fresh artichoke hearts, quartered

1/4 cup white wine (optional)

2/3 cup chicken broth (you may need more if you skip the wine)

juice of 1 1/2 fresh lemons

3 - 4 fillets flounder

2 tbsp capers
