Ingredients for 2 servings

3/4 teaspoon freshly grated lime zest

1 1/2 teaspoons extra-virgin olive oil

4 ounces boneless, skinless chicken breast, trimmed of fat

1/4 teaspoon salt

1 small clove garlic, peeled

1 tablespoon lime juice

2 cups fresh spinach, trimmed and cut into 1/2-inch strips

1/2 small mango, diced (see Tip), divided

Several dashes of hot sauce, to taste

1 1/2 teaspoons dark rum

3/4 teaspoon chopped fresh mint, or 1/4 teaspoon dried

4 ounces cooked, peeled shrimp, (31-35 per pound)
