2 spaghetti squash

2 teaspoons olive oil

2 cloves garlic, chopped

1/2 medium yellow onion, chopped

8 ounces cremini mushrooms washed, stems removed and cut into halves

1/4 teaspoon kosher salt

1/8 teaspoon crushed red pepper flakes

5 to 7 turns freshly ground black pepper

1/2 teaspoon fresh oregano + a bit for garnish, finely chopped

1 15-ounce can cannelloni beans, rinsed and drained

1 25-ounce jar Trader Joe’s arrabiata sauce (or your favorite)
