Ingredients for 6 servings

2 large aubergines, cut into even 2cm dice

40 g golden sultanas, soaked in hot water and one bay leaf

300 ml tomato sauce or tinned chopped tomatoes

1 red onion, sliced

1 tsp Ras-El-Hanout

1/2 tsp ground cumin

50 ml Olive oil

1 clove of garlic crushed

750 ml vegetable stock

1 tsp honey

1 tbs natural full fat yoghurt

1 spring onion, sliced

2 tbs flaked almonds

Salt and freshly cracked black pepper
