1 cup buttermilk

1 1/2 teaspoons baking soda

Macerated berries, recipe follows

2 tablespoons sugar

6 ounces white chocolate

3 cups all-purpose flour

1 1/2 cups superfine sugar

1 pint strawberries, rinsed, hulled and halved

1 pint blueberries, raspberries or blackberries, rinsed

1 1/2 teaspoons vanilla extract

Pinch salt

1/4 cup plus 2 tablespoons lemon juice

5 large eggs

1 teaspoon lemon zest

1 1/2 cups granulated sugar

1 teaspoon unsalted butter, softened, plus 6 ounces (1 1/2 sticks)

3 cups buttermilk

2 teaspoons fresh basil or lemon balm, leaves cut into chiffonade

Buttermilk Ice Milk, recipe follows

1/4 cup orange or lemon flavored liqueur

1/4 teaspoon salt
