Ingredients

1/2 cup wild rice

-- Kosher salt as needed

3/4 cup farro (see Note)

3/4 cup French green lentils (see Note)

1/4 cup balsamic vinegar, or to taste

1/4 cup extra virgin olive oil, or to taste

-- Freshly ground black pepper

1/2 medium-size red onion, finely chopped, about 1/2 cup

3 tablespoons capers

1 1/2 to 2 ounces chopped baby arugula, about 2 cups

-- Lemon juice, as needed

3 to 4 ounces feta cheese, chopped or crumbled into small pieces

-- Chopped parsley to garnish
