4 cups cold water

4 whole dried shiitake mushrooms

1 ounce shaved bonito flakes

1 tablespoon mirin or sake, to taste

1 tablespoon light soy sauce, to taste

Kosher salt, to taste

Eggs:

3 to 4 tablespoons unsalted butter

8 large eggs, lightly whisked

Garnish, to taste

Chopped roasted chestnuts

Finely shredded green onion

Shichimi-togarashi
