Ingredients

Basic Vinaigrette:

3 tablespoons white wine vinegar or lemon juice

1 tablespoon water

4 teaspoons dijon mustard

1/2 cup neutral oil (such as canola)

1/4 cup flavored oil (such as extra-virgin olive oil)

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper.

Soy Vinaigrette:

2 tablespoons sherry vinegar

2 tablespoons white vinegar

1 tablespoon soy sauce

1/2 cup canola oil

1 small shallot, finely minced (about 1 tablespoon)

1 clove garlic, microplaned (about 1 teaspoon)

1/4 cup extra virgin olive oil

Toasted Almond Vinaigrette:

1/3 cup toasted almonds, chopped into rough 1/8th-inch pieces

3 tablespoons balsamic vinegar

1 tablespoons honey

1 tablespoons chopped herbs (parsley, tarragon, or basil work well)
