2 tsp grated lime zest

2 Tbsp fresh lime juice

2 Tbsp butter, melted and cooled

1 tbsp vegetable oil

1 tsp sugar

1 (14 oz) can of black beans, drained and rinsed

3/4 pint grape or cherry tomatoes, halved

4 scallions, chopped

1/4 fresh cilantro, chopped
