1 chipotle chile, either dry or canned packed in adobo

4 magrets (single boneless duck breasts), with skin intact

8 garlic cloves, chopped

1/4 pineapple, peeled and finely chopped, or pineapple juice

Juice and zest of 1 lime

1 tablespoon sugar

Salt and pepper

3-4 tablespoons extra virgin olive oil

3 slices thick-cut bacon, diced (choose one that is not too smoky)

2-3 sweet potatoes, peeled, cut into 1-inch cubes, parboiled and drained

1/2 teaspoon ground cumin, or to taste

Handful of chervil
