12 Ingredients

  • 8 ozs orzo
  • 3 cups vegetable or chicken stock
  • 3 cups water
  • 1 1/2 cups pumpkin purée (or squash of your choice)
  • 1 1/2 cups vegetable or chicken stock
  • 1/2 cup whole milk
  • 30 sage leaves, cut into ribbons
  • 1 shallot, diced
  • 1 Tbsp butter
  • 3/4 tsp salt
  • 20 grinds fresh black pepper
  • 3 Tbsps Parmesan cheese

Meh. Prepared exactly as written, the end result was a bit too cheesy and gummy- textureless for my liking. Would benefit from more pumpkin, less cheese and a much shorter initial boil time for the orzo.
