1 1/2 cups sorghum flour, such as Bob's Red Mill brand

1 1/2 cups potato starch or cornstarch

1 cup tapioca flour

8 tablespoons vegan margarine, such as Earth Balance Natural Buttery Spread, at room temperature

1/2 cup sugar, plus 2 tablespoons for rolling

1/2 cup packed light brown sugar

1 large egg

2 teaspoons vanilla extract

2 cups sorghum blend (see headnote; first 3 ingredients)

1 teaspoon xanthan gum

1 1/2 teaspoons ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon freshly grated nutmeg

1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 tablespoon ground allspice

1/4 teaspoon ground cloves

1 cup confectioners' sugar

1 tablespoon water, or as needed

1 teaspoon salted vegan margarine, such as Earth Balance brand, at room temperature

1/2 teaspoon vanilla extract
