Ingredients for 2 servings

2 shallots , sliced

5 tbsp sunflower oil

FOR THE FISH

handful coriander leaves, roughly chopped

pinch caster sugar

250.0g cherry tomatoes , halved - a mix of red and yellow looks good

half a lemon

buttered, peeled new potatoes , to serve (see TIP)

Ingredients FOR THE COMPOTE

1 tbsp balsamic vinegar , white balsamic vinegar is best

200.0g plain flour

½ tsp cayenne pepper

3 tbsp olive oil

2 Dover sole (about 350g each, see TIP)

50.0g butter , diced
