Easy, fast, cheap, tasty, and if you fry it properly (correct temp and not overlong) then you aren't putting that much fat into the finished product, so it's relatively healthy!

Peanut oil for frying

1 1/2 cups corn flour, preferably stone-ground

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/4 teaspoon cayenne, or to taste

8 catfish or other white-fleshed fish fillets (about 3 pounds)
