12 jumbo scallops

1/4 teaspoon salt

1/4 teaspoon fresh pepper

Pinch of cayenne

6 strips bacon, partially cooked, halved length-wise

1 tablespoon butter

1 teaspoon olive oil

1/4 teaspoon garlic, minced

1/2 teaspoon onion, minced



Preheat oven to 400 F. Rinse & pat scallops dry with paper towel. Sprinkle with salt, pepper & cayenne. Wrap bacon strips around scallops & secure with toothpicks. Heat butter & oil in large skillet over med-high heat. Add garlic & onion. Place scallops loosely in pan(do not over crowd-cook in batches if needed) till golden brown on each side, approx. 1-2 min. per side. Place pan in oven. Bake 5-7 min. just till firm. Remove from oven. Discard toothpicks if serving as a meal. Leave them in if serving as a snack or appetizer.
