2 tablespoons unsalted butter, softened

1/2 cup plus 1/4 teaspoon honey

2 tablespoons soy sauce

1 tablespoon very finely chopped fresh ginger

1 scallion, white and green parts chopped

3 garlic cloves, 2 very finely chopped

Salt and freshly ground black pepper

1/4 cup cider vinegar

1/2 cup shredded carrots

1/4 cup mayonnaise

1 tablespoon sambal oelek or other Asian red chile sauce

2 large, thick, skinless catfish fillets (about 10 ounces each), halved lengthwise

Vegetable oil, for brushing

Thinly sliced cucumber and cilantro sprigs, for serving
