2 cups Fresh chopped spinach
1 cup Grape tomatoes halved
1 zucchini chopped
6 oz Rainbow Rotini or other corkscrew pasta cooked and cooled
3 oz Fat Free crumbled Feta
8 oz cooked chopped chicken (optional)
1/3 cup olive oil
2 tbsps lemon juice
1 cup white balsamic vinegar
1 tbsp dried basil
salt and pepper to taste
Mix together first 6 ingredients in a large bowl.
Assemble dressing by combining together olive oil, lemon juice, vinegar and dried basil in a covered mason jar or other coverable container. Shake well. Add salt and pepper to taste.
Poor dressing over salad mix. Add salt and pepper if needed.
Refrigerate for 1/2 hour to cool and to let flavored combine.
