Ingredients for 4 servings

8 x skin-on boneless chicken thighs

Kosher salt and freshly ground black pepper, to taste

1 1/2 tsp canola

2 x shallot, thinly sliced

1 1/2 tbsp Sherry Vinegar

2/3 cup dry white wine, such as pinot grigio or savignon blanc

1/3 cup Water

1 1/2 tsp fresh marjoram, finely chopped

1 1/2 tsp fresh flat leaf parsley, finely chopped

1 tsp fresh thyme, finely chopped

2 tbsp Unsalted Butter
