1 large onion, coarsely chopped

4 large garlic cloves

2 ounces fresh ginger, peeled and coarsely chopped

1 teaspoon whole cardamom seeds, or 1 1/4 teaspoons ground cardamom

8 ounces plain low-fat or regular yogurt

1/4 cup fresh lemon juice

1 tablespoon + 1 teaspoon ground coriander seed

2 teaspoons salt + salt to taste

1 1/2 teaspoons ground cumin

1 1/4 teaspoons ground mace

3/4 teaspoon ground cloves

3/4 teaspoon cinnamon

3/4 teaspoon cayenne

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon turmeric

2 tablespoons + 1 teaspoon corn oil

12 drops red food color (optional)

6 drops yellow food color (optional)

6 chicken breasts, skinned

4 chicken drumsticks, skinned

4 chicken thighs, skinned

4 chicken wings

6 tablespoons butter, melted

Lemon wedges

1 red onion, sliced into medium-thin rounds

Coriander-Mint Chutney (see recipe)

Mango chutney (homemade or purchased)

Saffron Basmati Rice (see recipe)
