Ingredients for 12 servings

2 Tbsp. butter

1 lg. onion, divided

1 rib celery, finely chopped

1/2 red bell pepper, finely chopped, divided

2 tsp. minced garlic plus 1 tsp. (I usually use at least a few cloves, divided

1 tsp. chopped thyme leave (if using dried spice use 1/2 tsp)

1 tsp. chopped rosemary (if using dried spice use 1/2 tsp)

1/3 cup chopped fresh parsley

2 eggs

1 1/2 dijon mustard

1/2 cup ketchup, divided

2 Tbsp. + 1 tsp. Worchestershire sauce, divided

1/2 cup heavy cream

2/3 cup breadcrumbs

1 lb. ground beef (the leaner the better)

1/2 lb. pork sausage (such as breakfast sausage)

1/2 lb. ground veal (Ground Turkey can be subbed)

1 1/2 tsp. salt, divided

2 1/4 tsp. pepper, divided

2 Tbsp. white or red wine vinegar

1/2 canned tomatoes, chopped or crushed

4 slices beacon, cut in half
