1/4 cup finely chopped water chestnuts

2 tablespoons soy sauce

1 tablespoon dry white wine or gin

1 teaspoon grated fresh ginger

1/2 teaspoon salt

1/4 teaspoon ground white pepper

About 54 won ton skins (8 to 12 oz.)

About 1 tablespoon beaten egg
