Ingredients for 4 servings

4 eggs

4 egg whites

5 fresh basil leaves

5 cups of fresh spinach

1/4 shallot

1-2 garlic clove

1/3 can of diced tomatoes can be your favorite flavors

salt

pepper

red pepper flakes

1/3 cup of parmesan cheese

Cooking spray

Preparation

1.

Preheat oven to 375

In an oven proof skillet heat cooking spray and cook shallot, garlic and red pepper under medium heat for about 4 minutes. Do not burn

In a mixing bowl, combine all other ingredients to make egg mix

4.

add egg mix to skillet/pan and cook on medium heat for a few minutes.

5.

Place skillet in preheated oven for 20 minutes or desired doneness
