Ingredients

1 15-ounce can organic pinto beans

1 15-ounce can organic black beans

1 15-ounce can organic kidney beans

4 teaspoons cumin seeds

2 teaspoons oregano (preferably Mexican)

1 tablespoon canola oil

2 tablespoons olive oil

3 onions, diced small

-- Kosher salt and freshly ground black pepper to taste

2 garlic cloves, coarsely chopped

4 teaspoons sweet paprika

3 tablespoons ground red chile

1 28-ounce can whole organic stewed tomatoes, chopped + their juices

1 15-ounce can organic tomato sauce (preferably Trader Joe's)

1/4 cup chopped fresh cilantro

-- Dash of red wine vinegar

-- shredded sharp cheddar cheese, sour cream and finely chopped cilantro for garnish (optional)
