1 pint heavy cream, goats', if possible
1 x 16 oz. bottle cajeta (or homemade)(goat milk dulce de leche)
1 x 8 oz. package gjetost cheese
1 Tbsp. vanilla extract
Blend cream and cajeta. Freeze cheese briefly in order to firm it, then grate or mince as finely as possible. Stir into liquids with vanilla. Freeze as usual.
