1 tablespoon reduced-sodium soy sauce

1 tablespoon honey

2 cloves garlic, finely chopped

1 tablespoon + 1/4 cup finely chopped fresh mint

1 can (20 ounces) unsweetened crushed pineapple (with juice)

1/2 cup chopped red onion

1/4 cup chopped scallions or chives

2 tablespoons finely chopped fresh cilantro

2 tablespoons lime juice

2 tablespoons shredded coconut, preferably unsweetened

1/4 teaspoon red-pepper flakes

Pinch of salt

1 cup uncooked brown rice, prepared according to package directions
