  • 1 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 8 Tbsps (1 stick) unsalted butter, cut into pieces
  • 1/4 cup sour cream
  • 2 tsps fresh lemon juice
  • 1/4 cup ice water
  • 1 small butternut squash (about one lb)
  • 2 Tbsps olive oil
  • 1 to 2 Tbsps butter (if you have only non-stick, the smaller amount will do)
  • 1 large onion, halved and thinly sliced in half-moons
  • 1 tsp salt
  • Pinch of sugar
  • 1/4 tsp cayenne, or to taste
  • 3/4 cup fontina cheese (about 2 1/2 ozs), grated or cut into small bits
  • 1 1/2 tsps chopped fresh sage leaves
