1 tbsp cider vinegar or white wine vinegar

1 tbsp lemon juice

1 tbsp salted capers , rinsed and roughly chopped (optional)

FOR THE HOLLANDAISE SAUCE

750.0g waxy potatoes (eg Charlotte, Maris Bard), peeled
