I made this at the last minute to dress up some pinto beans I was serving alongside grilled chicken, pluot peach salsa, and a cabbage salsa. I prepped a lot of that while waiting for my jalapeno to roast. So easy and what a big payoff. After mixing all the ingredients together at the end, I did cook on medium low maybe 5-10 more minutes. I love the idea of adding some broth and cheese.

This was good as is, but I can't help but crave the creaminess of refried beans. Plus it was too spicy for me as is, so I mashed it with some chicken broth and added cheese. Amazing!! It cut some of the bite without making it bland.

Ingredients for 4 servings

1 Tbsp olive oil, grapeseed oil, or canola oil

2 to 3 whole jalapeño chile peppers

2 to 3 thick-cut slices of bacon

2 cups of chopped onion

2 medium clove of garlic, minced

4 cups of cooked pinto beans (2 15-ounce cans, rinsed and drained)

Salt

1/2 cup, loosely packed, chopped fresh cilantro
