Ingredients for 4 servings

2 x FOR THE VINAIGRETTE -- medium yellow tomatoes, quartered

2 1/2 tbsp white balsamic vinegar

1 tsp Kosher Salt

a couple grinding of black pepper

1/4 cup Extra Virgin Olive Oil

1 tbsp fresh tarragon leaves, finely chopped

3 x FOR THE FRITTERS -- medium zucchini, grated

1/2 x medium red onion, finely chopped

1 x large red chili, minced

2 x large eggs

1 cup self-raising flour

1 tsp Cumin Seeds, toasted in a dry skillet

Kosher salt and freshly ground black pepper, to taste

4 tbsp Olive Oil, for frying

FOR THE SALAD --- a couple handfuls of mixed baby greens

1/2 pint Cherry Tomatoes, halved or quartered

1/3 cup Kalamata olives, coarsely chopped

1/4 cup Feta, crumbled

2 tbsp fresh mint, chopped
