Ingredients for 4 servings

2 1/2 tablespoons paprika

1 tablespoon dried leaf oregano

1 cup milk

2 tablespoons extra-virgin olive oil

1 tablespoon dried thyme

1 bunch arugula, washed, patted dry, and chopped (about 1 1/2 cups)

1 tablespoon cayenne pepper

2 large eggs

2 teaspoons plus 2 tablespoons Essence, recipe follows

1/4 teaspoon freshly ground black pepper

2 teaspoons fresh lemon juice

1 lemon, cut into 4 wedges

4 ripe Roma tomatoes (about 1 1/4 pounds), cored and chopped

1/2 cup clarified butter, or vegetable oil

1/2 teaspoon kosher salt

1 cup fine dried bread crumbs

1 tablespoon black pepper

2 tablespoons garlic powder

4 bone-in veal chops, each about 12-ounces

2 tablespoons salt

1 tablespoon onion powder

1 cup bleached all-purpose flour
