3/4 pound day-old country-style bread, in 2-inch chunks

5 pounds ripe slicing tomatoes (not Roma types), cored and quartered

1 1/2 red onions, thinly sliced

1/2 cup peeled whole garlic cloves

1/2 cup extra virgin olive oil + olive oil for drizzling

1/2 cup dry white wine

Salt and pepper to taste

3 to 4 large basil sprigs

Light chicken stock (optional)

Freshly grated Parmesan cheese
