Ah the Buche de Noel. Or as I like to say The Log of Happiness. I confess I have never successfully rolled a buche without breaking it. But that hasn't dampened my zeal. I like this recipe beause of the chestnut cream. Ever tried chestnut cream? Holy toledo it'll change your life. This recipe requires you to click through to the genoise sheet cake recipe on the Food Network, but that's okay. These babies are so much work, what's a few extra clicks? I don't generally feel the need to decorate my inevitably cracked buche with meringues and twigs, I prefer to just take my fork and make those little lines. If anything I'd sprinkle some powdered sugar for a snow effect, or add some plastic squirrels and raccoons for the overall nature look, it is a log after all.

Ingredients

7 ounces bittersweet or semisweet chocolate, chopped

1 small can, 250 grams, Chestnut Cream or Sweetened Chestnut Puree

1/3 cup rum

Buttercream, recipe follows

1 Genoise sheet cake, baked

Meringue Mushrooms, recipe follows

Sprigs of fresh Pine or Holly
