Ingredients for 45 servings

2 boneless skinless chicken breasts, cut into small pieces

4 tablespoons olive oil, plus more for cooking

1 teaspoon italian Spice (Basil, Oregano, Garlic, Rosemary, Thyme)

1 tablespoon sweet paprika

Salt and Freshly ground black pepper

Pinch of saffron

2 to 3 cups chicken stock

1 pound fully cooked chorizo sausage, roughly chopped

1 medium white onion, finely chopped

4 cloves garlic, minced

1/4 cup flat-leaf parsley leaves, chopped, reserve some for garnish

1 15-ounce cans whole tomatoes

1 cup arborio rice

1/2 cup white wine

1 pound sweet italian sausages links, roughly sliced into 1-inch rounds

1/2 cup frozen peas

1/2 pound large shrimp, peeled and de-veined

1/2 pounds mussels
