½ cup + 2 tbsp. unseasoned rice vinegar

3 tbsp. plus 2 tsp. sugar

6 tbsp. soy sauce

½ cup water

1 tbsp. toasted sesame oil

2 tsp. crushed red pepper

One 2-inch piece of fresh ginger, peeled and coarsely chopped

1 large garlic clove

12 oz. extra-firm tofu, cut into ½-inch thick wedges

2 celery ribs, thinly sliced

½ cup coarsely chopped cilantro

2 carrots, peeled and grated
