Lobster Sausage:

1 teaspoon canola oil

2 tablespoons minced fennel bulb

6 ounces raw shrimp, peeled and deveined

1 tablespoon heavy cream

10 ounces cooked lobster meat, coarsely chopped

2 tablespoons fresh tarragon leaves, chopped

Kosher salt and freshly ground pepper to taste

Wooden coffee stirrers or ice cream sticks, cut in half.


1 1/2 cups all-purpose flour

1 cup + 2 tablespoons yellow cornmeal

1/2 cup sugar

1 1/2 tablespoons baking powder

1 1/2 tablespoons kosher salt

1 1/2 cups milk

2 large eggs

Canola oil for deep-frying

Mustard Sauce:

1 cup creme fraiche

1 tablespoon Dijon mustard

2 tablespoons whole grain mustard
