Sandwich:

4 slices Swiss or Provolone cheese, cut to fit the bread in a single layer (2 1/2-3 ounces total)

4 slices quality ham (about 6 ounces)

Salad:

1 1/2 teaspoons red or white wine vinegar

1/4 teaspoon Dijon mustard

Salt and pepper to taste

1 1/2 tablespoons oil

5 ounces mixed salad greens

1 sweet-tart apple, cored and thinly sliced
