  • 2 Tbsps rice wine or sake
  • 1 (1/2-inch) piece peeled fresh ginger, thinly sliced
  • 2 (1-lb) salmon fillets (about 1 1/2 inches thick)
  • Cooking spray
  • 1 1/2 cups fat-free, less-sodium chicken broth
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup rice wine or sake
  • 1 Tbsp sugar
  • 1 1/2 tsps cornstarch
  • 1 Tbsp vegetable oil
  • 3 Tbsps fermented black beans, rinsed, drained, and chopped
  • 3 Tbsps minced green onions
  • 2 Tbsps minced peeled fresh ginger
  • 2 Tbsps minced garlic (about 8 cloves)
  • 1 tsp crushed red pepper
  • 2 Tbsps minced green onion tops
