  • 3 cups of your favorite tomato sauce
  • Olive oil
  • 1½ lbs eggplant, cut into ½-inch cubes
  • Kosher salt and freshly ground black pepper
  • 1 yellow onion, thinly sliced
  • 3 cloves garlic, finely chopped
  • ¼ cup fresh basil, finely chopped
  • 2 tbsp. fresh marjoram, finely chopped
  • 4 ozs mushrooms, sliced
  • 8 ozs penne pasta, or other tubular shape
  • 1 cup ricotta cheese
  • 2 eggs, beaten
  • ¾ cup half-and-half
  • 4 ozs freshly grated Parmesan cheese
