3 cups of your favorite tomato sauce

olive oil

1½ pounds eggplant, cut into ½-inch cubes

Kosher salt and freshly ground black pepper

1 yellow onion, thinly sliced

3 cloves garlic, finely chopped

¼ cup fresh basil, finely chopped

2 tbsp. fresh marjoram, finely chopped

4 ounces mushrooms, sliced

8 ounces penne pasta, or other tubular shape

1 cup ricotta cheese

2 eggs, beaten

¾ cup half-and-half

4 ounces freshly grated parmesan cheese
