8 bolillos or crusty Italian rolls, about 3 1/2-4 inches long

1 tablespoon olive oil

1 cup minced onion (about 6 ounces)

2 pounds lean ground sirloin

1 teaspoon table salt

1 1/2 teaspoons dried oregano

1 teaspoon ground cumin

1 tablespoon red chile powder

-- Freshly ground pepper

3 cloves garlic, minced

-- About 3/4 tablespoon hot sauce, or chile powder to taste

3/4 cup Salsa de Arbol (see Totopos recipe, below) or other red salsa

1 cup pitted green olives (5 ounces)

8 ounces Monterey pepper jack cheese, cut into thin, 1-ounce slices

-- Pickled jalapeno slices, for serving (optional)

-- Hot refried beans, for serving
