2 brown rice tortillas
1 package garlic and herb goat cheese
2 tbsps garlic infused olive oil
2 tbsps cinnamon basil
1/2 tbsp crushed red pepper
1 small white onion
1/2 package sliced mushrooms
1/3 cup sun dried tomatoes
Add olive oil to the pan and caramelize onions and mushrooms with salt and pepper.
Roughly chop sun dried tomatoes and add to the pan to warm through
Add the package of cheese and melt into the mixture.
Remove from heat and add basil, red pepper and other seasoning as desired.
Lightly warm the tortilla quickly on each side and fill half with half of the mixture. Fold over and flip once to warm throughout and brown the sides.
