The gravy:

4 tablespoons canola oil

2 cups sliced cremini mushrooms

1 cup chopped onion

1 tablespoon garlic, finely chopped

1 1/2 teaspoons fresh thyme, chopped

-- Kosher salt and ground black pepper, to taste

1 1/2 cups dry white wine

3 cups chicken stock

1 cup of veal demi-glace (see Note)

The meat loaf:

4 slices of levain or white bread, crusts removed and soaked in about 1 1/2 to 2 cups milk

1 pound ground veal

4 ounces ground pork

4 ounces ground beef

4 ounces tasso or other ham, finely chopped

2 tablespoons Worcestershire sauce

1/2 cup barbecue sauce (preferably smoky and spicy)

1 large egg, beaten

1 tablespoon fresh parsley, chopped

1 tablespoon salt

1 tablespoon black pepper
