Some flour for coating

3 spring onions

3-4 eggs, beaten

200 g smoked haddock (not the yellow dyed stuff!)

100 g cooked crayfish tails

50 g butter

900 g all-purpose potatoes (I used 2 huge baking spuds)

100 g smoked salmon (the 'mis-shapes' and trimmings you can buy more cheaply are ideal)

Oil for frying ( I used groundnut)

Panko style (dry) breadcrumbs for coating
