Ingredients for 4 servings

2 tablespoons extra virgin olive oil (EVOO), plus some for drizzling

3/4 pound chorizo sausage, thinly sliced, found in the packaged meats section near the kielbasa

3 cloves garlic, 2 chopped and 1 crushed

1 large yellow onion, chopped

2 ribs celery, chopped

1 large carrot, peeled and chopped

6 medium size red potatoes, halved and thinly sliced

4 sprigs fresh thyme

Salt and pepper

1 can fire-roasted diced tomatoes (28 ounces), such as Muir Glen brand

2 cups chicken broth

4 thick slices crusty farmhouse, country-style bread

1/2 cup flat leaf parsley leaves (a few large handfuls), picked

Zest of 1 lemon

Zest of 1 orange

2 tablespoons white wine vinegar (eyeball it)

4 eggs (1 per serving)
