8 flat anchovies (packed in oil)

2 large garlic cloves

2 tablespoons + 1 teaspoon fresh lemon juice

1 tablespoon cold water

1/2 teaspoon salt

6 drops Worcestershire sauce

Freshly ground pepper to taste

1/2 cup olive oil

2 large heads romaine lettuce

16 croutons ( 1/2- to 3/4-inch cubes)

5 tablespoons grated Parmesan cheese + a small hunk (optional)

16 pieces of chicken cutlets (the chicken tenders reserved from the Master Recipe)
