2 large beets, leaves removed

2 chicken breasts (3/4 to 1 pound total)

1 bay leaf

2 clove garlic, smashed

1 (4-ounce) heart of romaine

1/2 cup finely shredded manchego cheese

4 whole pita rounds, sliced in half

1 tablespoon extra-virgin olive oil

1 tablespoon cider vinegar

1 tablespoon brown mustard

Salt and pepper, to taste
