1 tbs of water

1 egg, plus 1 egg yolk

90 g (3 oz) of caster (superfine) sugar

40 g (3 tbs) of butter

200 g (1⅔ cups) of plain (all purpose) flour, sifted

30 g (1/4 cup) of icing (powdered) sugar, sifted

75 g (5¼ tbs) of chilled unsalted butter, chopped into cubes

1 egg yolk

60 ml (1/4 cup) of cold water

180 g (3/4 cup) of caster (superfine) sugar

2 tbs of water

2 egg whites
