Ingredients

2 cups all-purpose flour

1/2 teaspoon salt

2 teaspoons sugar

2/3 cup vegetable shortening (Dimock uses non-hydrogenated brands like Spectrum or Earth Balance, but use another fat like butter or lard if you prefer)

About 6 tablespoons ice water

5 cups sliced rhubarb

1 1/4 cups sugar

5 tablespoons flour

2 pinches cinnamon

1 1/2 tablespoons butter (optional)
