1 1/2 - 2 cups raw cashews (soaked overnight) - or measure about 1 - 1 1/3 cups before soaking

2 1/2 - 3 cups roasted butternut squash (scooped from skin) - or about 4 cups loose cubes*

2 Tbsp grade B maple syrup (If your squash is nice and sweet you can get away with less maple syrup)

3/4 cup plain/unsweetened almond milk (or sub soy milk)

2 Tbsp vegan butter

pinch of salt & pepper (to taste)

optional add-ins: tasted sage (a few leaves), roasted garlic cloves to taste, cayenne to taste, nutritional yeast to taste

Pasta: 6-8 ounces (any variety - spelt penne used)
